Jean-Philippe and Ingrid Bouchet began their estate, Clos Des Mourres, in 2009 with just 5 hectares, adding another 10 hectares in 2012. Ingrid had previously worked in wine sales, while Jean-Philippe had experience both as a grape grower and a dealer in winemaking equipment, but this was their first foray into winemaking. Jean-Philippe believes in keeping his winemaking as simple as possible – all the wines are fermented in steel tanks for 3 weeks, then transferred to cement tanks to mature for 8 months. They are then bottled without filtering or fining and with miniscule amounts of sulphur.
