NERO D'AVOLA - 2018
Light ruby red with foaming purple bubbles, aromas of fresh red berry fruit with a touch of raspberry liquourice. The palate is explosive with cherries and plum, with a mouth filling foam and a zesty like of natural acidity that is typical of this variety. Serve cold, no need to shake before opening. Recommended food pairings: Charcuterie, pizza, dark chocolate. Think Aussie Lambrusco!
Tim Wildman started making Pet Nat in 2014 in Australia focusing on southern Italian varietals, as they have a low ph and high acidity, these grapes lend themselves well to natural wine making. Each year Tim makes the pilgrimage from the UK to South Aus to pursue his bespoke Pet Nat project. He believes in making and selling the wine himself and telling the stories of the wine directly from the vine to the glass. "There’s an old wine trade adage that the effort of the industry is split between 5% making it and 95% getting it to the customer. If a tree falls in a forest and no one hears it, does it make a sound? If a deluded English guy thinks he can make wine, if it doesn’t sell it, has he made wine?"
